Brazilian Cheese Rolls (Pão de Queijo)

Ingredients:

  • 2/3 cup plant-based milk

  • 2/3 cup water

  • 1/4 cup olive oil

  • 1 tsp salt

  • 2 cups tapioca flour

  • 3/4 cup nutritional yeast

  • 1 egg or egg substitute (Just Egg)

Instructions:

  1. Prepare the Liquid Mixture:

    • In a medium saucepan, combine the plant-based milk, water, olive oil, and salt.

    • Stir over medium-high heat until the mixture comes to a boil.

  2. Incorporate the Tapioca Flour:

    • Remove the saucepan from heat.

    • Gradually stir in the tapioca flour until well combined. The mixture will be sticky and thick.

  3. Cool the Mixture:

    • Let the mixture cool for a few minutes until it's warm to the touch but not hot.

  4. Add Nutritional Yeast:

    • Add 3/4 cup of nutritional yeast to the mixture.

    • Mix thoroughly using your hands. The dough will start to come together.

  5. Incorporate the Egg:

    • Add the egg or egg substitute to the dough.

    • Knead the dough with your hands until it's smooth and your hands are numb from the effort. This helps ensure a uniform texture.

  6. Form the Rolls:

    • Preheat your oven to 350°F (175°C).

    • Roll the dough into golf ball-sized pieces.

    • Place the balls on a baking tray lined with parchment paper or a lightly oiled baking sheet.

  7. Bake:

    • Bake in the preheated oven for 25 minutes or until the rolls are lightly golden and puffed up.

  8. Enjoy:

    • Remove from the oven and let cool slightly.

    • Serve warm. Add love & enjoy!
