Crispy Veggie Hash Browns

Ingredients:

  • 1-2 lbs. Potatoes of your choice (sweet potato, red potato, Yukon gold, etc.)

  • Garlic powder

  • Onion powder

  • Black pepper

  • Paprika

  • Cayenne pepper (optional)

  • 1 yellow onion

  • 3 cloves garlic

  • 1 green bell pepper

  • 1 red or colored bell pepper

  • 1 jalapeno (optional)

  • Avocado oil

  • Salt

Directions:

  1. Cut the potatoes into small cubes. Rinse the cubed potatoes and sprinkle them with garlic powder, onion powder, black pepper, paprika, cayenne pepper (if using), or your favorite seasonings. Shake to coat the potatoes evenly with the seasonings.

  2. Place the seasoned potatoes in an air fryer and cook for about 15 minutes, or until crispy and golden brown.

  3. Meanwhile, chop the yellow onion, garlic, green bell pepper, red or colored bell pepper, and jalapeno (if using).

  4. Heat a skillet over high heat and lightly spray it with avocado oil. Add the chopped vegetables to the skillet and sauté until slightly tender, about 3 minutes.

  5. Once the potatoes are cooked, add them to the skillet with the sautéed vegetables. Give everything a good mix and season to taste with salt and pepper.

  6. Load up your plate with the hashbrowns and smother them with your choice of salsa or ketchup. Add love and enjoy!
