Easy enchilada casserole

Ingredients:

  • Avocado oil (for preheating and lightly oiling the pan)

  • 1 onion, diced

  • 1 bell pepper, chopped

  • 1 jalapeño, chopped

  • 1 zucchini, chopped

  • Your favorite red or green enchilada sauce

  • Organic corn tortillas

  • 1 can refried beans

  • 1 can black beans

  • Healthy nacho cheese sauce (Please find this Recipe on this website under Sauces)

  • Guacamole and salsa (for serving)

Directions:

  1. Preheat your pan and lightly oil it with avocado oil.

  2. Sauté the diced onion in the pan until it turns brown.

  3. Add the chopped bell pepper, jalapeño, and zucchini to the pan, and cook until slightly tender (about 3 minutes). Remove from heat.

  4. Spread a few spoonfuls of your chosen enchilada sauce on the bottom of a casserole dish.

  5. Begin layering the casserole: Place a layer of organic corn tortillas over the sauce, followed by half of the refried beans, half of the black beans, and half of the sautéed veggies. Reserve enough of each ingredient for another layer.

  6. Repeat the layering process: enchilada sauce, tortillas, refried beans, black beans, and sautéed veggies.

  7. Top with a final layer of tortillas, and then generously spread healthy nacho cheese sauce over the top, along with any remaining enchilada sauce.

  8. Bake the casserole in a preheated 350°F oven with the lid on for 20 minutes, then an additional 10 minutes without the lid.
