Spicy plant-based Cheesy Cauliflower Casserole

Ingredients:

  • 1 1/4 cups plant-based milk

  • 2 tablespoons tapioca starch

  • 1 teaspoon salt

  • 1 teaspoon black pepper

  • 1 small jalapeno, diced and seeded

  • 2 oz leeks, chopped

  • 1 cup healthy nacho cheese sauce (find the recipe in the sauce section under “recipes” on the website)

  • 1 head of cauliflower, separated into bite-size pieces

Instructions:

  1. Preheat the oven to 350°F.

  2. In an oven-safe or stovetop-safe casserole dish, combine the plant-based milk and tapioca starch. Heat until the mixture is hot.

  3. Stir in the diced jalapeno, salt, pepper, and chopped leeks. Cook for a few more minutes until the mixture begins to thicken slightly.

  4. Gently fold in the cauliflower florets and healthy nacho cheese sauce until the cauliflower is saturated with sauce.

  5. Cover the casserole dish and bake in the preheated oven for 25 minutes.

  6. Uncover and bake for an additional 10-15 minutes or until the cauliflower is tender.

  7. Allow to cool for 10 minutes. Add love and enjoy this spicy and flavorful plant-based casserole with a kick!
