Butternut Enchiladas: A Fiesta of Flavors

Ingredients

  • 2 lbs butternut squash: peeled and cubed

  • 1 yellow onion: diced

  • 4 cloves garlic: minced

  • 1 can of black beans: rinse and drained

  • 10 organic, whole-grain tortillas

  • 2 cups of red enchilada sauce

  • Optional Garnishes: Avocado, cilantro, salsa, lettuce, and tomato. 

Cooking Directions

  1. Steam the Squash:

    • Begin by steaming your butternut squash until it's soft and friendly, about 10 minutes.

  2. Sauté Onion and Garlic:

    • While the squash is steaming, sauté the diced onion and garlic in a pan until they're golden and fragrant.

  3. Oven Prep:

    Preheat your oven to 350 degrees – it's time to get hot in here!

  4. The Grand Mix:

    • In a bowl, gracefully mix the steamed squash, sautéed onion and garlic, black beans, and 3 tablespoons of enchilada sauce. This is where the magic happens, and flavors come together in harmony.
