Hearty wild rice soup

  • 6 cups of vegetable broth:

  • 1 cup of uncooked wild rice (rinsed)

  • 8 oz of Bella or button mushrooms, sliced

  • 4 cloves of garlic, minced:

  • 2 carrots, diced

  • 2 celery ribs, diced

  • 1 yellow onion, diced

  • 1 bay leaf

  • 1 tbsp of fresh rosemary or thyme (or 1 tsp dried)

  • 1/4 tsp of nutmeg: Just a pinch for a warm, nutty sweetness.

  • 1 3/4 cups of soy milk, or a 14 oz can of coconut milk: This will give your dish a creamy texture. Choose soy milk for a lighter broth or coconut milk for a richer flavor.

  • 2 cups of chopped kale

  • Salt & pepper to taste: For final seasoning adjustments

Cooking Directions

  1. Sauté the Onion:

    • Start by heating your large stockpot over medium-high heat. Add a few drops of oil, or broth to keep ingredients from sticking. Add the diced onion and sauté until it becomes translucent and fragrant. This is the first step in building the flavor base.

  1. Add Vegetables and Seasonings:

    • To the pot, add the sliced mushrooms, minced garlic, diced carrots, diced celery, bay leaf, rosemary or thyme, and nutmeg. Stir everything to combine the flavors. The aroma at this stage will be a delightful preview of the finished dish.

  1. Simmer the Rice:

    • Now, introduce the uncooked wild rice into the pot. Mix it with the sautéed vegetables and seasonings. Bring the mixture to a simmer, then reduce the heat to medium-low.
