Ulu (Breadfruit) Taco Pizza

Ingredients:

  • 1/2 prepared ulu (as shown in the link below)

  • 1/4 - 1/2 cup water

  • 1 tsp salt

  • 1/2 cup cornmeal

  • 1 tsp oil (to prevent hands from becoming a sticky mess)

  • 1 can of refried beans

  • 3 cloves garlic, chopped

  • 1 tsp cumin

  • Healthy nacho cheese (find the recipe in the link below)

  • Your favorite taco toppings (plant-based taco meat, lettuce, sprouts, olives, tomato, guacamole, salsa, hot sauce, etc.)

Directions:

  1. Preheat Oven: Preheat your oven to 450°F. If using a pizza stone, place it in the oven to heat up as well.

  2. Prepare the Ulu Crust: Cut the prepared ulu into large chunks. Place the ulu and about 1/4 cup of water into a blender. Blend until smooth, adding more water a little at a time to achieve a smooth consistency. Add the salt and cornmeal, and blend one last time to incorporate everything.

  3. Form the Crust: Place a piece of parchment paper on the counter that is as large as your pizza pan. Oil your hands to prevent the dough from sticking, then spread the dough onto the parchment paper to the size of your pizza pan.

  4. Bake the Crust: Transfer the parchment paper with the dough onto your pizza pan or stone. Bake for 12 minutes.

  5. Prepare the Beans: While the crust is baking, mix the refried beans with chopped garlic, cumin, and a sprinkle of salt.

  6. Prepare Toppings: Prepare the healthy nacho cheese and get the rest of your toppings ready.

  7. Assemble the Pizza: Take the ulu crust out of the oven and spread the bean mixture evenly over it. Bake for another 5 minutes.

  8. Add Toppings: Remove the pizza from the oven and add all your fabulous toppings: plant-based taco meat, lettuce, sprouts, olives, tomato, guacamole, salsa, hot sauce, or whatever you love.

  9. Serve: Add love and enjoy your delicious and nutritious Ulu Taco Pizza!
